Crockpot Cheesy Chicken Chili is comfort food at it’s finest. Comfort food to me is warm and creamy and cheesy, and must be easy! Nobody is feeling comforted by spending all day in the kitchen! This easy chili checksall thsoe boxes! Creamy and delicious and takes hardly any effort!
I had previously published a Slow Cooker White Chicken Chili recipe here, and while I still love that one, this one has a completely different flavor profile. This one has southwestern flavors with tomatoes with green chiles, black beans, and corn. But there are also two secret ingredients that you usually don’t see in chili! Dry ranch mix and bacon! I never though to put bacon in chili, but it is genius. It adds a salty bite and takes this chili over the top.
I use my Instant Pot for chili (best beef Instant Pot chili recipe!) way more often than my crockpot these days, but I still love to get it out for slow cooked recipes every once in a while. Nothing beats the taste of chili that has been cooked for hours! I love the Instant Pot Slow Cooker. It is such a great shape and has so many features.

Slow Cooker Cheesy Chicken Chili
This Slow Cooker Cheesy Chicken Chili recipe is a crowd favorite and is perfect for any occasion!
Ingredients
- 2 chicken breasts
- 2 cans Rotel tomatoes with green chilis
- 2 cans black beans drained and rinsed
- 1 can corn
- 32 oz chicken broth
- 1 packet dry ranch seasoning
- 8 slices cooked and crumble bacon
- 8 oz cream cheese at room temperature
- 1 cup shredded cheddar cheese
- salt and pepper to taste
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tbsp garlic powder
- extra cheese, Fritos, Hot Sauce for serving
Instructions

Beginning with the chicken on the bottom, add all ingredients to the slow cooker except for cream cheese and cheddar cheese and toppings.

Set temperature to low and cook for 6-8 hours or high for 4 hours. Half way through cook time, add cream cheese.

When ready to eat, shred chicken and add cheddar cheese. Let melt then serve with desired toppings.
