Grilled Romaine Caesar Salad with Asiago Cheese Toast Points

Have you ever had a salad with grilled lettuce? If you have then you’ll agree with me that it’s delicious. If you haven’t tried it, then you are probably shaking your head at me like I am crazy. I am not crazy though, I promise! Grilling romaine makes for a smokier, heartier salad, and adds so much flavor to the humble Caesar salad!

I first tried a grilled Romaine Caesar salad at one of our favorite neighborhood restaurants. I instantly loved it and knew I had to recreate it at home. It is such an easy salad to make and requires very little chopping, which is always a plus! I stepped up the restaurant version by adding these delicious Asiago Cheese Toast Points, which are the perfect receptacle for piling the salad on top of!

I love to serve mine with lemon wedges to lightly squeeze over the top. I think it adds such a delicious brightness to the salad. The lemon taste with the nutty Parmesan is a great combination. One of my favorite tips for creating restaurant like salads is to use a vegetable peeler to grate your cheese instead of using a traditional grater. This creates big thin chunks for your salad, which gives you more cheesy goodness surface area!
