Instant Pot Baked Potatoes are such an easy side dish recipe. Honestly, I very rarely make baked potatoes because I don’t have an hour to let them bake on a weeknight! And I don’t like them in the microwave. So we have just been forgoing baked potatoes for years now. Well, my daughter discovered she loves them so I decided to throw them in the Instant Pot and see how they turned out, and well….it was a success! The texture of these baked potatoes are amazing!
How to make baked potatoes in the Instant Pot?
A bad baked potato is such a disappointment, but this potato recipe is seriously fool-proof. You add your pierced potatoes to the Instant Pot on top of the trivet. I like to rub my potatoes in olive oil and sea salt for some flavor on the skin. Then you add water and cook! That’s it! 20 minutes later you have perfectly soft potatoes!
While I usually only recommend natural release for Instant Pot recipes involving meat, I like to let these release for 10 minutes. Everything just ends up more tender that way!
What Instant Pot should I buy?
I highly recommend the Instant Pot brand and not one of the knock offs. I have a 6 quart and it is plenty big for our family of four. If you have a much larger family, go with the 8 quart.

These easy Instant Pot Baked Potatoes take a fraction of the time of a traditional baked potato and taste even better!
Ingredients
- 4 large russet potatoes, scrubbed clean
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 cup water
- desired toppings
Instructions

Scrub potatoes clean. Rub your potatoes in olive oil and then sprinkle with salt. Poke several times with a fork or sharp knife.

Set the metal trivet into your Instant Pot. Add the water and set the potatoes on top.

Set the timer to 20 minutes high pressure or manual pressure. Let cook.

When cook time is over, let naturally release for 10 minutes. Open the lid, and then serve.
