What is the tik tok pancake cereal trend?
This pancake cereal became popular last year during the early parts of the lockdown when we all had all the time in the world for making breakfast. Basically, you just make a bunch of mini pancakes and throw them in a bowl and eat cereal style, with either milk or a big drizzle of maple syrup. The classic version is a regular pancake, but I wanted to spice this trend up with chocolate pancakes.
If you can make a regular pancake, you can make these mini chocolate ones. You start with a basic pancake batter and add cocoa powder. If you want regular pancake cereal, you could omit the cocoa powder and just do the classic tiktok pancake cereal.
How to make mini pancakes?
When I was younger, I thought silver dollar pancakes were so cool. Those cute little pancakes were the best! This version is even smaller and I kept my pancakes about the size of a quarter. The easier way to do this is to use a squeeze bottle. If you don’t have one, you could use a ziploc bag with a cut edge or even a very small cookie scoop. I use my squeeze bottle for lots of things- drizzling icing on cinnamon rolls, decorating cookies, and storing homemade aioli- so the $3 purchase is definitely worth it for me!

Chocolate Pancake Cereal
This fun take on the tik tok pancake cereal trend will be a family favorite breakfast recipe!
Ingredients
- 2 large eggs
- ⅓ cup sugar
- 1 cup milk
- 3 tbsp unsalted butter melted
- 1 tsp vanilla extract
- ⅔ cup all purpose flour
- 2 tbsp cocoa powder
- 1 tsp baking powder
- 1 tsp salt
Instructions

In a large bowl, add milk, eggs, sugar, melted butter and vanilla extract. Mix all of the ingredients.

Add in the flour, baking powder, and cocoa powder. Whisk until well combined.

Transfer the pancake batter to a squeeze bottle. Alternatively you may use a ziplock/piping bag. Cut a small hole at the corner of the ziplock bag to use it as a piping bag.

Heat a non-stick pan to medium heat. Brush some oil over the pan. Squeeze the pancake batter, size depends on how small you would like your ‘cereal’ to be. For me, I did size of quarters. Ensure that you leave space in between mini pancakes as they will spread.

Cook for about 1-2 minutes until you observe bubbles. Flip them all at once. . Cook the other side for another 1-2 minutes, until golden brown. Careful not to burn them.

Serve with honey, maple, chocolate syrup, powdered sugar or whatever you like!
