But phew,  the title of the post is a mouthful! Kind of like this breakfast…a big fat, delicious, but healthy mouthful. Seriously, this breakfast is not your normal pancake breakfast. We love pancakes in our house, but find ourselves hungry again by 11 am. That won’t be the case with these! You will be full and satisfied way past lunch time.

My favorite place to shop here in our town is Giant Eagle. I just find their selection better than most stores and they always have great deals, especially on meats. They are currently featuring some new fall products and I scooped up the Gingersnap Granola and Pumpkin Spice Yogurt when I saw them there. I knew those two products would be delicious for breakfast and they would be even better when incorporated into a dish with our favorite pumpkin pancakes! These pumpkin pie pancakes are really my favorite breakfast recipe. I wish it was socially acceptable to each pumpkin year round, because you would find me making these pancakes in July with no shame. The texture and taste of these are just so good.

But you know what makes these pancakes even better? A giant dollop of yogurt that has been mixed with cinnamon and pumpkin spice syrup. I used plain Greek yogurt because that’s what we like, but if you aren’t partial to the tang of it, feel free to substitute with regular yogurt or vanilla yogurt.

I love the creamy smooth texture that the inside of the pancakes have and the gingersnap granola adds such another great texture to this breakfast. The granola has that unmistakeable gingersnap cookie taste which I always look forward to having around the holidays. These pancakes would be perfect for Thanksgiving morning breakfast, or just for any chilly fall morning! Use my favorite pancake pan and you will have perfectly sized and round pancakes!

And you definitely don’t need to worry about being hungry two hours after eating this breakfast! They are so hearty with the granola and the protein packed yogurt topping. These will keep you full through many hours of Christmas shopping or through some serious holiday house prep!

Pumpkin Pancakes with Gingersnap Granola and Pumpkin Spice Yogurt 

Pumpkin Pancakes with Gingersnap Granola and Pumpkin Spice Yogurt

Ingredients

  • For the pancakes:
  • 2 cups buttermilk or a scant 2 cups of regular milk with 2 tbsp. of white vinegar mixed in and left to sour for 10 minutes
  • 1 cup pumpkin puree
  • 2 eggs
  • 2 tsp. vanilla extract
  • 3 tbsp. unsalted butter melted and then slightly cooled
  • 2 1/2 cups AP flour
  • 1/3 cup white sugar
  • 1 tbsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/2 tsp. salt
  • 1/2 cup Gingersnap Granola-slightly crushed
  • For the topping: this is per pancake stack
  • 1/2 cup plain Greek yogurt
  • 1 tbsp. Pumpkin Spice Syrup
  • 1/2 tsp. cinnamon
  • 1/2 cup Gingersnap Granola

Instructions

  1. Melt the butter and then set aside to cool.
  2. In a medium sized mixing bowl, mix together flour, white sugar,baking powder, baking soda, cinnamon, salt, and ginger.
  3. In another bowl, mix together buttermilk, pumpkin, eggs, vanilla, and butter.
  4. Pour wet ingredients over the dry ingredients and then gently fold in wet ingredients until all combined. Don't overmix. Add in 1/2 cup of the granola and fold in gently. Let batter sit for 5 minutes to rest.
  5. Preheat a griddle or non stick pan to medium high heat. Melt butter on the pan and then add 1/4 cup scoops of batter at a time, flipping when one side becomes golden brown. Continue until all mix is cooked.
  6. To make yogurt topping, mix together yogurt, syrup, and cinnamon and stir well.
  7. On a plate,stack 3-4 pancakes and top with prepared yogurt mixture and more granola. Serve immediately and enjoy!

  1. It’s so frustrating, but I haven’t been able to find any pumpkin puree this year! I heard something about rains and a pumpkin crop shortage, so I guess not much canned pumpkin made it’s way to Hawaii this year. I would love to make these pancakes because I’m definitely if if there’s Greek yogurt involved!
