These Snickerdoodle Pancakes are a delicious take on the classic pancake recipe. Fluffy pancakes have sugar and cinnamon both in the batter and sprinkled on top! Reminiscent of cinnamon toast or everyone’s favorite snickerdoodle cookie, these tasty pancakes will become a go to for breakfast! These were made completely outdoors on the Cuisinart 360 Griddle, too!

Snickerdoodle Pancakes are reminiscent of my favorite Christmas Cookie, but in breakfast form! It’s always great to start out the day on a sweet note, isn’t it?
We love pancakes for weekend breakfasts and I find myself getting out the griddle every weekend, but I am so excited that I can now make a complete breakfast on our Cuisinart 360 Griddle Cooking Center!
With spring and summer entertaining right around the corner, it is so fun to invite people over for a breakfast on the patio! Growing up, my Dad would hold a “breakfast on the verandah” event and everyone would congregate on our patio and my dad would cook everything outside and serve us there! It was so fun and such a different way to entertain. The Cuisinart Griddle is perfect for outdoor entertaining and you can do everything from grill, griddle, steam, smoke, and pretty much anything you would do on a traditional stove top!
How to season your 360 Griddle Cooking Center
Just like with a cast iron skillet, seasoning your griddle is very important. A properly seasoned griddle will ensure optimal performance and longevity of your griddle and will help create a non-stick surface for cooking. It is definitely worth the effort!
The griddle arrives slightly seasoned but a little more work is required straight out of the box. You want to start with some soapy water and a paper towel to wash off the shipping oil. Dry the surface well. Next you want to select your oil. Flaxseed oil gives great results but you can also use EVOO, vegetable oil, or soy oil.
You want to use a clean towel to rub a thin layer of oil all over the surface. Once coated, turn your griddle on high. The oil will eventually smoke, which is good. Let is smoke for about 15-20 minutes. Let the surface cool and then repeat the above process 2-3 times until you get a smooth black surface on the griddle.
Now that you are seasoned you can cook! I like cooking my pancakes, bacon, and sausage all on the griddle at the same time! This pancake recipe is really easy and you have two choices when preparing. If you are short on time, use your favorite pancake mix and add in the brown sugar and cinnamon. If you have a couple extra minutes, I recommend using the pancake recipe below! It is worth the extra couple minutes!

Snickerdoodle Pancakes
These delicious Snickerdoodle Pancakes are traditional fluffy pancakes topped with a mixture of cinnamon and sugar! A cookie favorite turned into breakfast!
Ingredients
Dry Ingredients
- 1 cup flour
- 2 teaspoons baking powder
- 1 tablespoon brown sugar
- 1 tablespoons white sugar
- 1/2 teaspoons cinnamon
- pinch salt
Wet Ingredients
- 3/4 cup milk
- 2 tablespoons cooled melted butter
- 1 egg
- 1 teaspoon vanilla
Topping
- 2 tablespoons melted butter
- 1 tablespoon white sugar
- 1/2 teaspoon cinnamon
Instructions

Mix together cinnamon and white sugar for topping and set aside.

Preheat your griddle to medium heat (indoor or outdoor) and lightly coat with oil.

Mix together dry ingredients in one bowl and wet ingredients in another. Slowly add wet to dry and mix to incorporate but do not over mix.

Add 1/4 cups of batter directly to griddle or using a silicone pancake mold.

Once pancakes bubble, flip and cook the other side, about 2-3 minutes.

Set pancakes aside. Once done, dip each pancake in the melted butter and then the cinnamon sugar mixture. Serve immediately. If you have any melted butter and cinnamon sugar left, mix together and top the pancakes!
These pancakes sound delicious! And the griddle is a really neat looking tool. I cannot ever get pancakes to cook properly when I try to make them in a skillet and I’ve been thinking it’s time to get a griddle! I need to look into this one!
